Help with reloading cart idea

Hello Backfire community! I recently purchased this cart at a hospital auction and am wanting to turn it into a reloading cart. I want to add the 3/4” channel so that I can put my Inline Manufacturing riser and the quick attach plates. I currently have 3 reloading presses (turret, single stage, progressive). How would y’all recommend attaching the channels? A solid wood door or 1” plywood is what I have thought of, but how do I attach them to the stainless steel top?

Ooh. I can see the vision. Maybe add a butcher block countertop on it so you have wood to drill into? Would add cost but it’d look nice.

How thick would the countertop need to be, do you think?

I got a 2-1/4 (1-1/2 plywood + wedi panel + tiles) fixed work bench - but 1-1/2 +/- butcher block should be plenty and you can bolt into.
