I was thinking .270 Win then more rationally thought 7mm PRC or 7mm Rem Mag, but then figured - just one and only one? - I might sometimes want semi-auto capability, so Wilson Combat Tactical Hunter (18" bbl 1:10 twist) in .308 Win with 178 gr ELD-X.

My Christenson Arms Ridgeline scout 308. It’s so lite, it’s so accurate! I can do everything with this round.
Proof Research Elevation, .308 Win with a 20" barrel, shoot Barnes 165gr Vor-TX. I would choose any .308, 30-06, 300 WSM or WM - depending on range.
Probably my .300win with Barnes TTSX and LRX or the Nosler E-Tips. I have a browning X-Bolt which is incredibly accurate and shoots 180/190gr and even the lighter 150s great. Maybe change the scope and add something with a little more range than I currently have for some longer range shots. Out of what I currently own that rifle is probably the most versatile and capable of taking down anything I need it to.
300 wm with barnes TTSX 165gr. I shoot this in aTC encore prohunter. Covers all I need for hunting but geez I am glad I don’t live in that world. And I do not have feeding problems. unless i have really thick gloves on.
Based on the guns I own right now? One gun, one cartridge, one bullet:
I’d keep my Tikka CTR in 6.5 Creedmoor, and I’d just stick with Hornady Black, 147 grain. I know, it’s just a factory round but it’s not expensive at all and it consistently shoots sub MOA, and in fact I have had better results with it than some of the more expensive match ammunition. You can take it out hunting or go ring steel with it.
Can we do this exercise again for rimfire specifically? Or maybe rimfire doesn’t count? But I would also squirrel away a Ruger 10/22 in this theoretical scenario, even if I had to hide it from the goobermint. CCI Mini-mag (the target/varmint one).

You can’t do this I’ve spent every day since I got married, convincing my wife that it’s impossible to get by with just one gun.
I keep bouncing between my Mauser M12 in 30-06 flinging 180gr spbt and and my recent built Stevens 200 (I recently found one that had sat in stock unfired) in 22-250, it’s in a MDT HNT26 chassis and chambered in 22-250. It’s a laser (proper Australian spelling) on foxes, goats, pigs, wild dogs etc. I’m not allowed to use it on deer down here but know it will do the job just fine. Still I’m sticking with the M12 ought6. I been in love with 06 for over forty years it just does anything I ask.

I think the gun I have is what I’d choose and that’s why I bought it. HMR in 308. Maybe I’d go for the hmr carbon or premier.
I think I’d pick 175g terminal ascent. I’ve heard great things but I’m still a noob. Haha

I’d love to get my hands on a 7mmPRC but down here in Australia nobody knows anything about them. The only one I’ve found advertised is $7699AUD (USD5130). The Project X is a wonderful rifle but a few too many $$$ for me.

Another podcast has basically the same question and one guy said 12g pump shotgun. As a survival gun pretty good case to make if you have birdshot, bb’s, buckshot and slugs at your disposal. Of course this goes against the one bullet limitation.
